Chef CC Consalvo creates delicious  holistic meals for A-listers including Kerry Washington, Emily Deschanel, America Ferrera, Khloe Kardashian, Kelly Osbourne, Rashida Jones, Sandra Oh, Akiva Goldsman, Amy Brenneman, Billie Joe Armstrong, Philip Bailey and Todd Lieberman (to name a few). As a Personal Holistic Chef and Wellness Counselor, CC specializes in super clean, Paleo, Vegan and gluten free cooking. NMF: Can you explain what makes a holistic chef different from a regular chef?

CC: There are a few differences between holistic chefs and other chefs. For me, there are two components that go hand and hand. First I seek out locally grown, organic and seasonal ingredients in their whole form, never processed. Which most chefs do nowadays.  The other is knowing what my clients specific health needs are and supporting those needs with nutrient dense food. So that might be the defining element. Taste of course, is most important as food is pleasure, but It’s also about the chi or energy of fresh, harvested ingredients and pairing them with humanely raised meats and seafood. The end result is better tasting food that is clean and healing.

NMF: Is it expensive to lead a holistic lifestyle? Can you explain what that might include?

CC: One way of cutting down on the expense of holistic living is making things yourself. Everything from super power coffee drinks to household cleaner can be made very inexpensively at home. It’s the time that we don’t seem to have enough of so we pay for the convenience. If we make projects fun and include our friends and family, then it’s less work, more rewarding and we save money. For example, I love prepping veggies at home by myself it's meditative. I also include my niece. She gets the experience of knowing where food comes from and she also learns the satisfaction of making a meal, eating it and feeling good about it. Quick tip:  Throw a cooking party. Get your peeps together to cook and make enough for everyone to take home.  

NMF: What do clients love most about your offerings?  

CC: My clients always say they “feel the love” in my food. That’s the greatest reward ever. When they feel what I’m doing, it’s magic. They know I’m channeling them when I cook and I do. My clients also love to enjoy the freshness of the season which is always demonstrated in my cuisine. My clients know they can ask for what they need and I’m happy to really personalize every meal. There’s a mutual gratitude. Food goes deeper for some people. Food is directly connected to what goes on in our lives. Food effects how we feel and operate.

NMF: You have a number of celebrity clients including Khloe Kardashian.  What is Khloe's favorite shake? 

CC: Khloe’s favorite shake of mine is packed with antioxidants. It contains mâtcha root which is a green tea extract and lots of fresh berries. This one is easy to make at home.

                 Khloe’s Green Berry Shake               

  • 1 cup of fresh (or frozen) strawberries.
  • 1 tablespoon of Matcha powder (superfood)
  • 1/2 cup of unsweetened almond milk
  • a drop of raw, organic honey.

Put all ingredients in a blend tec/blender/Vitamix and blend until smooth.
